The Symposium will contain three main sessions and a special theme, addressing important aspects related to the "Delivery of Functionality”:


  1. 1.       Sustainability-focused food systems
  2. Food design approaches based on plant-based innovation; food waste recycling (and up-cycling); and cellular agriculture
  3. 2.       Health-forward food systems
  4. Engineered delivery systems for health promoting bioactives; physical approaches for removal of negative nutrients; material science-based ingredient structuring, food structure design
  5. 3.       Personalized food systems
  6. Delivering functionality in tailor-made foods; food –body interactions (sensory, oral processing, digestion, release, bioavailability, bioefficacy, genetics, and microbiome); customization of food for individual needs
  7. 4.       Special theme:
  8. Delicious Disruption - Food start-up highlights
